As a child, I feared that I would somehow be sucked into the grip of slimy, clingy seaweed on the water’s edge, so it was never my favourite thing. Little could I have imagined that one day I would have a daughter who so loves seaweed that she wrote her degree dissertation about it, and that I would subsequently fall in love with this much underrated algae. I have had to shrug off past mythological stories like the 18th century disappearance of a ship’s crew in the Sargasso Sea, blamed on the grabbing seaweed, and the scary seaweed-haired Sea Bucca of the 19th century. Instead, l have learnt to love it. Dare to explore and there’s a whole underwater paradise below the waves, offering endless colours and mesmerising shapes. Seaweed has so many uses already, but if my daughter has anything to do with it, it will save the world too!” – Hilary Stock
